Compare concentrates with ready-to-use ingredients on the amount of usable prepared product each delivers, not on concentrate volume or purchase price alone. For fruit juice concentrate, the USDA Food Buying Guide evaluates it as fully reconstituted juice, while a USDA standard defines reconstituted juice as concentrate mixed with a stated volume of water. The cited materials do not provide current Hong Kong prices or supplier terms, so they cannot establish which option is cheaper.

Start with a comparable quantity

A litre of concentrate and a litre of ready-to-use ingredient are not automatically equivalent. Before comparing them:

  • For concentrate: Identify the concentrate quantity and the stated water addition, then use the resulting reconstituted quantity as the comparison basis.
  • For ready-to-use ingredients: Identify the quantity supplied and the amount actually usable in preparation.
  • For both formats: Do not assume a conversion ratio, yield or wastage rate when the supplier documentation does not provide one.

The USDA Agricultural Marketing Service document cited here is a tangerine-juice manufacturing standard. Its definition supports the reconstituted-basis comparison, but other concentrates may have different product-specific instructions.

How to check the unit economics

Use a common prepared-output basis:

Cost per usable prepared unit = all documented, relevant costs ÷ usable prepared output

Keep product cost, water, delivery, packaging, handling, storage and other losses in that calculation only where they are documented and relevant to your operation. A lower invoice total, larger pack or apparently stronger concentrate ratio is not enough on its own.

USDA also notes that prepared-product yields can be affected by:

  • Quality and condition of the food
  • Storage conditions
  • Handling
  • Portion control

For concentrate, confirm that the stated dilution has been followed before judging the prepared output. For either format, record usable output by batch where possible rather than substituting an assumed yield.

What you must still confirm

Before choosing a supplier or approving a bulk order, obtain and document:

  • The current product price, pack size and minimum order quantity
  • Any applicable delivery, packaging, storage or other charges
  • Payment, return and other contractual terms
  • The exact water addition or other preparation instructions
  • The usable yield under your actual quality, storage and handling conditions
  • Any product-specific standard or preparation requirement

Until those figures and instructions are verified, the available evidence does not support declaring either concentrates or ready-to-use ingredients more economical.
